End of year Luau!!! And Sand Cake Recipe!

Happy Sunday y'all!!! I have had such a busy week that I've barely had time to sleep let alone blog.  Carly Summer has been sick, I've been trying to tie up all the loose ends at school, getting stuff ready for our training at LSU the last week of May, and for some unknown reason I've applied to graduate school again to continue my education and get my Ed Specialist degree, or Ph. D, depending on how much sanity I want left in my life. But tomorrow starts our last week of the 2013-2014 school year :( Sad to see my firsties leave me but we are having our end of the year party tomorrow and it's a LUAU!!! Hawaii baby!!!


In honor of this wonderful party I've made a sand cake. It's like a dirt cake but made with Golden Oreos!!! Yum!!
This is what you will need: 
2 packages golden Oreos
2 3.4 oz packages French vanilla jello pudding
3 1/2 cups milk
1 8 oz package cream cheese, softened
1/2 cup butter, softened 
8 oz. Cool whip
1/2 cup powdered sugar 

First, throw the cookies in a food processor and pulse until sandlike. 

Then, cream together the cream cheese, butter, and powdered sugar. This is also a great base for icing!! 

In a separate bowl, mix the pudding, milk, and cool whip. Let sit until thickened, about 5 minutes. 

Add the pudding to the creamed mixture and blend until fully incorporated.  I use my stand mixer with the whisk attachment and scrape down the sides of the bowl periodically. 

Now here is the fun part!! Layer the cookie crumbs and the filling in a fun sand bucket (that of course has been thoroughly washed!!).
Start with the cookies, then some filling, then some more cookies, and so on making sure to end with the cookie crumbs. If you can find edible candy seashells to garnish go for it!! I used fruit slices from Walmart that looked like shells.

Louisiana Teacher Blogger Meetup 2015!!

 Oh my goodness you guys!! I am so over the moon about telling you all about our first Louisiana Blogger Meetup!!  I've been known to ramble on, so I'm going to attempt to make this short and sweet and to the point!
